Just a general question: What are benefits of making a province you already own into a vassel? (I have not seen any option to "vasselize" anything other than provinces you already control).

A province with the wrong culture and/or religion that isn't very rich often benefits you more as a vassal than if directly controlled. Vassal states pay you half their income but don't count as needing to be improved for the purposes of advancements or stability.

Plus, if they have huge revolt risk, it's sometimes better to just make them a vassal so you don't have to deal with it. It also reduces badboy, doesn't it?

There's one additional benefit--if there's a nation that will probably make trouble for you in the future, you may be able to make them vassals early on and prevent them from becoming a great power. This is especially true for nations that get a lot of good events, don't change religion, and depend on alliances to expand.
