This guide will tell you how to keep a steam game exactly the way you want it forever. Preventing updates from breaking your mods or wasting your time. Battletech naturally, has been used as the main example, so you can preserve your mods or take your time with your old campaign(s). Or maybe your internets just bad and you just want to play games rather than updating them. I don't judge :).

No "achievements" to be had though right? Offline is just that...
 
Yeah, sadly no achievements on an "old version" kept using this method.
I played my first campaign playthrough in Steam offline mode at release. I'm pretty sure I got credit for some of the steam achievements I earned.
Not on desktop to check which ones atm.
 
Does this same process work with GoG client?

Normal GoG doesn't update automatically. Not sure about GoG Galaxy.

I don't own the GoG version, but my understanding is you just download the normal GoG version and that stays as it is, without you needing to do anything.
 
By default, GoG Galaxy updates automatically... but you can turn that off on a per-game basis. It will then notify you when a new version is available, and you can choose to update at any point thereafter.

(I don't recall what the setting was called, and I'm not currently on my Windows system. I think you just go to the settings menu on the game page in Galaxy. Pretty straightforward.)
