Please explain your issue is in as much detail as possible.
I have noticed during campaign play that sometimes enemy mech will chose to fire weapons even if this means that they overheat and the stability damage they take will kill them.

This has happened twice so far for me - enemies with less than 5 CT structure left overheat and thereby commit suicide. Not sure if this is intended or not, but one of the two times this happened was during the first fight against victoria, who is a plotrelevant character, so I feel that this porbably isn't intended.

I've seen this problem too. The AI has no check if the overheat damage will cause loss of any location, even the CT. If I could, I'd make it check against the combatgameconstants to see how much damage its weight class will take and use that to deny overheating if less than that amount remains in the CT or maybe other locations as well.
