Just had another matrilineal marriage sneak up on me: my heir, who was betrothed to a foreign duchess, found himself getting married and leaving for his wife's nation, without any notification to me.

Not a bug if your heir was landed. When you land someone you give up control over their affairs, and yeah, they might be dumb enough to accept an offer to matrilineally marry.
Then it was your ruler who was in charge. Good reason to revolt against him, he's treating your progeny like bargaining chips. Still not a bug, though. When you die and start playing said heir, get a divorce from the pope or start murderin'.
You probably accepted the after-betrothal marriage proposal without reading. It appears that currently, after the future bride and groom grow up, AI proposes marriage which benefits it the most. It means usually regular marriage for your daughter and matrilineal marriage for your son.
Here's a possibility. I betrothed my son/heir to a young woman who was second in line for a county. I didn't realize between the betrothal and marriage that both her brother and her father died. When it came time to tie the knot, she was already a countess. Although the marriage remained a normal patri-marriage, my son still left to be with her in her new demesne. He returned with her when he inherited the duchy.
Could this be what happened to you?
No. He was the prince and heir to the throne. His betrothed becoming countess doesn't suddenly take precedence over his title, or change a patrilineal arrangement into a matrilineal one.
EDIT: I've had this happen once again, since I started this bug thread. Fortunately, I'd saved before going to the wedding. The first time, it suddenly became matrilineal. The second time? No, it remained patrilineal. Definitely buggy.
