Attacking during a Great Holy War?

I wanted to know whether its worth attacking someone involved in either the Crusades or the Jihads. I want to press a claim for some land that's valuable, and was planning on doing this while everyone else is busy fighting for their God, I can fight for myself. What are the benefits and disadvantages of this? (I have no intention to fight in the GHW).

There are penalties if you attack someone of your own religion who is defending against infidels. Otherwise it's always a good idea to attack when they are busy in other wars

Just watch out if the one you attack has allies on their side in the GHW and attaches those armies to their stack. Even though the allies are neutral to you and likely ineligible to join your war, they'll still slaughter your troops if they're attached to your foe.

So if I'm fighting a person in the crusades, I'd be fighting everyone involved?

If I'm all the way in a different part of the world, I'd rather not want Jersusalem, personally I would think taking Rome would be much easier.
