Some of the wars get to be a lot to manage, I would like to assign an army to a region for a specific mission such as siege or defense.
For example, I'm currently playing France, and recently had to deal with a grand coalition, which among others included Castille who have a PU on Portugal. I started there due to the lower density of castles relative to Germany. Once I had Iberia occupied I moved most of my armies out to fight the eastern front. I left one army behind, and that proved justified. The various AIs were dropping small armies off all over Iberia and running all around like kids with bumper cars. I would have liked to just give that army a mission to hold Iberia and not have to micro it while dealing with the eastern front.
