Early game flanking cavalry is what swings most battles. Have as many infantry as the enemy has total units then add 4 cavalry.

I generally keep to this rule until there is decent artillery available. When that happens, and if I can afford it, I do as Chgrogers explains. Having Artillery covering every front-line soldier makes you pretty tough.
