OK, let's say you want to build an army of 10 regiments. What compositions are effective for combats? 8 Infantry and 2 Artillery? More Artillery? Mixed with Cavalry? How do you set up your armies?

arty and regulars are slow. I would only combine guards with engineers to blitz affectively. Same goes for cavalry; there might be a "combined arms" bonus, but having cavalry in the same army than artillery is pure waste of tactical potential. Remember that cavalry is AWESOME chasing low ORG/MOR ennemies. This leaves us only with the following setup:

1. Spearhead Army
2x Eng (one ENG could be enough)
8x Guards

2. Forteress busting Army
5x Arty (as many as you can afford)
5x Infantry

3. Harass/Rebells killer
5-10x Cavalry

In the early game you use cavalry mainly for occupations.
At this stage an army without cavalry takes too long... Once you get guards, cavalry seems less important. (to the point where I'd only use that for my colonials).

Amount of artillery depends on the size of your armies, and the big guns tech. Art is good in the later game when the frontage is small, but in the beginning, large infantery forces do better.
