I think the game is fine as it is (with the latest NA patch). Wiping out entire armies was incredibly rare, and just look at the thirty years' war as an example of how wars were actually fought at the time - with armies maneuvering around each other and skirmishing for weeks before someone withdrew. Major, decisive engagements were rare.
From a gameplay perspective, you just have to learn how to manage a defeat enemy - pursue with cavalry, keep reserves in case his splinters attack your occupied forts, etc. It makes war a lot more dynamic than if it was just 2-3 battles and then one side has won completely because the other side is out of troops.
