There is also the Inca, Cherokee, Iroquois, and about a total of a dozen American native countries that can be played.

However, the game was designed to be very Europe-focused, so while the rest of the world is playable, the cards are stacked in favor of the Europeans (and second to that, Asia), so playing as any American (or African) nation is rather difficult.

Just so you know, if you right-click a nation's shield just after selecting a scenario, you can play any available nation at that time. As to the aztecs, and most other pagan nations. Their religion and lack of knowledge of other (european) countries causes them to get some serioue tech penalties. But just browse through the FAQ (or wiki) or maybe in an AAR and you can see the specs.
