I think it was highlighted a bit during the livestream, but I think I've missed that. Or, maybe it's not there.

Anyways, it seems that the buildings that grow are selected randomly. My question is: is this true, or can you actually set "styles" that your building will adhere to everytime you grow something?

Kinda like the one from SC4, where if you set the style to "New York 1940" only, then all of your growable buildings will be taken from a pool of the New York 1940 building list.

While it's probably beyond the scope of the team to do a lot of different architectural styles in the base game, I agree it would be a great idea to have that style definition in the mod tools so that modders could add a vast amount of different models and have them integrate into the game nicely. I love the idea of starting a city with "heritage buildings" that are awkward to work around but give the city so much more flavour.
