Playing the latest monarch journy as the nomad and recently conquered like 50 counties in a single war, is there any way to quickly hand out the counties to barons?
Any way to quickly create barony vassals?

1. If you left-click on a county (to open the holdings window in the bottom right of the screen) and then right-click on the picture of one of the baronies in that window, you should be able to auto-generate a character for each barony. (This does not work for the county capital - but, as a nomad, there probably aren't any county capitals.) (However, I'm only about 95% certain that this interaction is available for nomads, because my nomad games usually involve burning everything.)

2. It'd probably be better for you to completely pillage every holding in all 50 counties. (As long as you can spare the horde troops to put down the inevitable rebellions.)
3. You can hold all of the baronies/temples/etc without penalty: you don't have a "demesne size". No need to do everything right now, if you don't want. (Eg. if pillaging everything all at once would create a clan demand for more land, you could do a bit at a time.)

Well, there is a cursed decision you can choose in the decisions tab, but nobody actually does it more than once.

you can't hand out the county titles to non-nomads at all. you can right click each holding and create a vassal for the holding manually. game will generate a new character of your culture and religion for free.
in really large nomad lands that gets annoying. consider burning down the castles instead of handing them out. cities and temples are no problem because they'll always spawn a new holder when the old one dies, but baronies use feudal succession laws and can die out and you have to create a new holder manually.
every county with 2 or more holdings does not count as nomad lands, so you can hold an infinite number of such counties without having to give more lands to your vassal khans. that's a big advantage so keeping the holdings intact is a perfectly viable strategy.
