I am in a PU with Poland. Vassals are Wallachia and Montenegro.
Casttile honoured the alliance but will probably peace out soon. Austria is Emperor.

Easily, especially if you are defending. Use attrition and destroy their smaller stacks with your big and better lead stack. Unless you've already got really high WE and no generals and low tradition and are extremely outnumbered ; however, I see you have a 5k stack and 20k manpower, so you should be good. Since they're attacking, they'll be getting lots of WE really quick and you can pay them (or reduce sphere for 10 warscore each) and they'll probably accept.

I've seen a lot worse... I was playing as brandenburg just now and inheritted burgundy and oldenburg. Which, combined with being emperor, increased my forcelimits and I no longer had enough troops to reach 50% of my forcelimits => France, Lithuania, Bohemia, Teutonic Order and Denmark instantly declared war on me because they thought I was weak.

You'll be fine. If the Ottomans join in, you'd be in a pretty bad position. Don't worry about Scotland, Mantua, Parma, or Baden. Poland will deal with Silesia then invade Austria. Focus on Austria and Aquileia. Kill Austria with attrition. They should have Men At Arms, but your Cavalry ratio is 2-1 instead of 3-1 so take advantage of that. Let your main army regain their forces and you have enough manpower to bring in new armies. You may have to mint a bit; just don't go above 5% inflation.
Remember that the AI will go for sieges instead of killing armies. Avoid them and resiege to take back your provinces.

Actualy there is only 1 enemy. Austria. Take Aquilea as part of austria, and treat scotland and parma as annoyance, they are not realy going to win this war for austria. And if you realy lose, just offer one or two provinces. If i were you, i would try to make some kind of white peace or something like that with them. But if you manage to beat their armies, do not white peace. If you win with them, take whole bohemia, and remove it from HRE. Don't take lausitz if it is not bohemian culture.

You still can bring like 30k army, just mint, and hire few mercenaries. If you realy need to, take a loan.

I will try the war tonight. To be honest when I first booted up hungary I got a core on bohemian moravia, went to war and they bet me. So when I saw an Austria-Bohemia I rage quit.

Furthermore I haven't learnt how to exploit the AI yet. Which will be my biggest problem.

Thats a very winnable war, build troops I would even go over support limit as this could be an important war.

I would aim for the force release of Bohemia and Tirol, when bohemia gets released they will only have 20% legitmacy, you can then - insult, dissolve alliance, use spy for obscure documents and PU them.

This will give you cores on all the czech provinces and the 2 saxon(cultural assilimation might have happened) can be removed from the empire, Tirol can be diplo vassilised.

edit

Outsiege the AI and have a decent army with your best general shadow the main austrian army, encourage the AI to launch an assault and then attack with the main army and bring up reinforcements.

It might be worth using a spy to infiltrate their admistration which clears the fog of war over their provinces, but since they are emperor they can move any where in the HRE without military access

You will have hurt austria and they will probably try to take tirol in 5 years so be prepared but if bohemia is still around it will be real easy.

another edit

If you try to force PU bohemia the emperor will probably help them as you are not part of the HRE so they will be called to arms, if they have no troops they will probably dishonour the call. You want to be part of the HRE to expand in it as all inheritances in the HRE give cores on HRE territory.

Best way to do this is become emperor and add your capital to it, vassilising 3 electors is the best route to been emperor.
Koln, Trier and mainz are the best since they can't be PU'd unless they have been force released as kingdoms

this will be a time war buy for time. so while you are fighting austria on the front expect losses and build replacement troops on your providence furthest from the front lines so if they happen to destroy one of your stack of 5 or 10k you be able to recover with fresh troops. and even if you lose 2 or 3 providence to seiges dont quit or accept peace just keep fighting and building soilder you will be able to push them back. this is my stragety when fighting a war thats no in my favor

Bohemia has the strongest army in Europe on start. It is not a good idea to day 1 dow them.

So I managed to avoid the war by accident by building more troops.

Then At a low piont, I am called to war against austria. I agree beliving I could win. Austria Brandenburg and some more pile me and the 4x16 thousand stacks of Austrian troops insta size my provinces.

I do have a save. When the war happened I quit reload and saved a non-autosave save. Then went back and waited for the war to happen. And got smashed.

I think Austria has ART.

And my inflation is 9.0.

I was trying to mass build churches to reduce stability cost.

The point in a war like this is to not fight at all. Or at least to fight as little as possible. As long as your enemy is standing on your land, they will suffer from attrition and their war exhaustion will rise. This is good so you want them to stand on your land. As long as you have an army in the province next to them, they will not assault the fortress so they will have to stand there for half a year or something. Let them stand there. And if/when they win the siege, just walk in behind them when they have moved to the next province and assault it back. If you play like that for a while, their WE will be very high and they will probably agree to a white peace. If you want to win the war, you could strike back when their army is much weaker than yours, kill them and start sieging their land.

That's the basics in fighting a bigger neighbour.

Yeah this is just wrong. You need to keep 1k troops near the sieging stack, so they don't assault, and eat all the atrition. Best, have troops there before they go there, and scorch the earth(and then run).
