I conquered Sinai on crusade, and I decided to give it to the Knights Templar as a reward for helping me win. I thought this would make them my vassal, but it doesn't. It doesn't make them cheaper to hire or anything. I have the option to request vassalization, but they won't accept.

So, what's the point of doing it? Besides roleplay, of course.

You earn a great deal amount of piety points. Besides, if u have a province of 2 to spare is nice to see what the holy order can do with it. My experience it would be conquered by a Muslim Emirate very soon.

I don't know about that. I gave them a slot within a county and they built their castle but it seems like they don't improve it. I've had to build their improvements.

To have them as a vassal, you must give them a duchy whereby you are the de jure king and their grandmaster's culture must be the same as your's.

And why do you wanna give them something you ask? Well if they are your vassal, you can raise their troops at half the piety cost and their troops are always gold free for you. Which makes them excellent in dealing with whack-a-mole rebel stacks in addition to providing much needed heavy cav against muslims and heretics. But the last time I succeeded was in 1.02, not sure about 1.04 tho..

Sorry for noob question, but what is the benefit of many piety points ? Excellent relations with the pope ?

Piety improves your relations with all religious figures in your realm, and the pope. High relations with the pope can prevent excommunication. High relations with your bishops and archbishops means you get more/any taxes, as well as more troops to levy from those holdings.
To grant them land, well, sometimes they ask for it, so it comes up as an event. Otherwise, I'm not sure, maybe click on the portrait of their captain?

Well then why should I give land to holy orders so as to increase levy size and tax from bishops. I thing I would be better off if I keep lands for myself and collect direct taxes from there.

Makif: Could be true, it is a strategy game where you have lots of options and some work better than others in different situations. I've conquered lands just to hand over to the pope before because I really wanted that piety for Paragon of Virtue (which grants another 100 piety), and so I could make a Kingdom title (burns 200 piety)

In 1.04, you don't have to be the same culture as the Holy Order in order to vassalize them. Simply give them a de jure duchy, offer vassalization. As the German Holy Roman Emperor, I followed those 2 steps in order to vassalize all 3 vanilla HOs.

You need piety to create certain titles and to hire the holy orders. Also you don't need the holy orders to be of your culture to vassalize them as if you give them enough land to create/usurp a ducal title they will make that their primary title and pass it on to children thus giving you a chance to ninja it away through marriage/claims.

Like others have said, it gives you a nice piety bonus. Quite helpful if you're having trouble in that regard. Unfortunately, giving them land in recently conquered territory is a bit dicey, as they usually get reconquered almost immediately, in my experience. In my last game, I built a castle in Venice, upgraded it to the limits of my technology, then gave it to the Hospitalers, to see what they would do with it. Did the same for the Templars in Genoa, but they ended up becoming vassals of the Il Khanate somehow, and by the end of the game, the barony was a possession of the Khan of Persia.

Emperors have it easier than kings when offering vassalization. Kings may still need correct culture.

Afaik it is the only way to get rid of land that you better not own anyway ;)

In my game as Sweden (started as count of Gotland) the first crusade was called for Barcelona but most of the duchy allready belonged to christians (Arragon and HRE) so it was basicly a crusade for 1.33 counties (only one holding of the 2nd one).
Since I was busy reuniting the swedish de-jure area and fighting off pagans I had no intention to take the land (and become target of a muslim holy war or the emporers ducal CB) not to mention that I was out numbered about 5:1 even before the emir called his allies so I thought I just declare crusade once the AIs do to get rid of the -25 penelty and sit it out. Unfortunatly nothing ever happens the way I hope it will so it took the AI 20 years to react, 2 years later muslim stacks in scandinavia foreced me into a white-peace and another 40 years later I had to end this damn crusade myself (with some help of an order).
Since I didnt care for another wave of muslims (or even worse the HRE) in scandinava while I do my local wars I wanted to get rid of the land asap and the order was my only option. (And yes Garak, 2 years later the order was landless again, but thats not my problem ;) )

How do you gift land to Holy Orders?

Go to the grandmaster of the order it there should be a button that allows you to give titles to him

I gave the Teutonic Order lots of land (though after awhile it stopped giving me piety for it...)

I was very sad when the Grandmaster changed main title to some random kingdom, so the Grandmaster was now a king :(
