I think you will need the improved grand campaign, or IGC for short.
In it, you can choose to have no major nations.

IGC can be downloaded from the depot, but it seems not to be working lately. But you can do it anyway modifying the config scripts. Search the forum about how to do this.

About how. I succeeded in this with Spain and I'm trying again now with England. Not a large experience so! But IMHO you need to:
1) Play a strong major nation with lots of colonists: Spa probably the best, but Eng of Fra probably good too.
2) Play VERY VERY aggressive since the first few years (in current game in 1475 Scotland Ireland and Britanny were annexed). Don't care about your high BB points but always go for annessions, separate peaces and so on to try to gain several provinces at every "World War".
3) Try to have a permanent casus belly against someone. This way YOU decide (often, but not always) WHEN to attack the one you have CB against without losing stability; so you'll detonate the next World War. Given your high BB value you'll then be immediately attacked by anyone else, so you can move against the "real" objectives.
Spain i.e. has permanent CB against any heaten.
If you are France don't take Calais. Use it as a ready excuse to attack Eng when you want.
With England I let France keep Kent in the first war to have a CB against her. Now Fra has only Kent, Paris and a handful of colonies. When I'm ready for war against, i.e. P-L, I declare war to Fra, await DoW from P-L, take quickly a couple of colonies from France and march for the nth time on Paris with the army specialized in this. Make peace with Fra for the colonies and go on with P-L.

Make a copy of your EU folder and all subfolders - as the IGC required you to overwrite some of the EU files, you have to have a double copy on your hard drive.
Unpack the IGC zip to a separate folder, and then copy all files over one of your two EU directories.

To get the IGC, select mods from the left hand frame and then download 2.3. 2.3 is the last version of the IGC for EU1. Personally, I preferred 2.0k version myself, as it had the USA 1492 fantasy option. Both are excellent and make for virtually infinite playability.

Note: Once you install the IGC, the other scenarios and campaigns in EU are unplayable. The IGC makes thousands of modifications to your leader files, and the country tag files. My suggestion would be, if you have the hard disk space, create a 2nd EU folder and install the IGC to that, as once in a while its nice to play the smaller scenarios from the original version.

What option do you click on to have no major nations with the IGC? From what I've seen so far, you at least have to select 8 major nations, be it France or the Knights.

You need to run IGCConfig.exe (you may want to create a shortcut to this on your desktop) to change playable (major) nations.

In the nations list on the top left of the box that opens select "None" for each nation EXCEPT the one that you want to play. Click "Apply", and start EU and open the IGC scenario.
