That is rather out dated if I recall, from version 1.9.2. I had several surprises using that list.
From my experience this always was accurate, even if some tags are probably missing.

Done. I started as Austria and revoked in 1545 so I assumed the rest of the game should be really easy but I realized I could only get 5 missionaries, 4 when I went revolutionary. With England removed shortly after I revoked privlegia, new world was all Catholic. While I was playing HRE game, months before revoking, an obscenely powerful Ottomans declared was on Genoa and two more great powers joined. I had to give them 100% warscore in cash but then expansion was pretty straightforward.
I had to use Spread Revolution CB to convert large nations. I didn't realize I could do until someone on forum told me. I had to use vassals to feed them Africa and did most of Asia myself. The game likes to throw surprises when a random Catholic nation gets one of their provinces flipped, albeit, without religious zeal.

Even better than One Faith is the 201/235. There are so many stupid achievements which require a full campaign that I'm amazed that you had the courage to have that much.
Impressive end of game. With the situation in 1700 I certainly did not expect you to succeed before 1800.
As for the 201 achievements, that's huge but at least one French player managed to do all 235.

With only 1581 hours I highly doubt that this is possible and I have high suspiscions he added some of them. A full campaign takes at least 20 hours if you WC and push it to the lategame. Probably more if you're trying difficult things.
It's actually 202. I like to do them in "bulk". I did WC, one faith and planning to do Graze Your Horse next. Then I'll do Russia region ones like Golden Horde, Odoyev, Tatarstan and Pskov. Next patch when they nerf Ottomans I'm gonna do Romania, Serbia, Ottoman minors achievements. Then I'll switch back to semi-WC like Theodoro, Indian Reich, Najd and Norwegian wood.
I don't know him personnaly, only saw his post on a French forum, but I still think it is doable.
He said he spend more time reading AARs and guides than playing, and had a achievement combination strategy. And he used some exploits for the hardest ones (he cited Norwegian Wood).
A WC game would give you at least dozen bonus achievements you won't have to chase (No Pirates in My Caribean, Laughingstock, etc...).
I guess that you made a typo and wanted to say a WC takes at least 200 hours (or you're very impressive), but you only need to do one (if you do it with Ryukyu and combine it with All Faith). Then you have two other achievements needing tech level 32 with Poland and an African state. All other achievements don't need you to go to 1800+.

I have 2500+ hours, nearly only Ironman. I got all non-nation specific achievements besides One Faith, but I still have only 161. Ok, you can safely cut away 500 hours with fails or even more, but still hard to believe. He never failed?
Also, remember how they were adding one achievement for Poland per patch for 3 patches straight?
That's more that that concerns me. Theoretically one campaign as Ryukyu can grant you tons of achievements, but I doubt you try your first WC as Ryukyu, so that's at least 2 WC. And patches add new achievements. For instance, I already did a full campaign as Ryazan to get Kinslayer, and then there was the Russia patch and a new Ryazan achievement so I have to do another one if I want all the achievements.
Anyway, if he did it that's insanely impressive.
