When i was playing as Poland and started takeing the pagan coasts, i offcourse ent my bishop to start converting them. Danzig converted ery quickly and then culture flipped to polish within the year.

Both of those seemed to occur way to quickly than is realistic. How is religious conversion and culture flip determined, was i just very lucky? or do pagan provinces just get assimilated quickly

Religious conversion appears to be a straight % per year (you should be able to tell the exact % by hovering over appropriate tooltip for the court chaplain). I've had provinces that took years to convert to Christianity, and ones that converted quickly. It's a luck of the draw

Cultural conversion I have less idea about, it's probably in the text files somewhere, i'll take a look

The provinces along the Baltic should be easier for the Poles to convert since they are in a similar cultural group, west slavic. I noticed that it was extremely easy to reconvert heretic provinces with my own culture aswell.

The standard cultural conversion has a base MTTH of 100 years for every eligible province, but occurs 25% faster (multiplicative) for every point of stewardship above 9, up to 13. At stewardship 13 or above, that's a mean time of 31 years.

There's another cultural conversion event available for further-flung provinces, if the province's religion group doesn't match your state religion and is not adjacent to a province of your culture; the timing of it, however, is identical, save for being twice as fast for turkish or mongol lords.
