I would love it, if you were able to both, offer and demand something in a peace deal.
This could be useful, if you want to take something that is just above the warscore, or if you don't want to be that mean, so you can recompense your enemy a bit.
Maybe, if you do so, your offers could be subtracted at half their warscore, so peace deals don't end up being a huge trade?

I think the majority of war peace saw some sort of compromise by the end, even the steamroll roflstomp ones like the Prusso-Dane wars of the late 18th century.

It'd be sweet if you were 1 warpoint off getting a province having the ability to in turn, pay them 200 ducats to make the loss go over better.

This would actually make sense, since it wasn't uncommon for this to happen in history...as long as we don't end up with the Ottoman's real conquest of the Mamluks.

You could put limits on what percentage of war score could be offered while still making demands- say, 30% warscore could be returned through offers, allowing you to demand 130%. This would keep AI deals sane, and as a further preventative (until a nice heuristic could be designed) would be to just prevent the AI from offering such deals but still accept deals given.

"I'll fully annex you for 140 warscore, but in return I'll give you 50% of my trade power. Fair deal, isn't it?"
May work warscore-wise, but AI would never accept that peace deal. Try declaring war and offering enforce trade power. It won't work. Additionally, other conditions could apply, like you have to be winning the war to make mixed peace deals, or full annexing ignoring mixed peaces (war reps and humiliate are disabled with full annex, so it's not going to be impossible to code).

The problem is that there is basically no positive positional aspect to provincial warscore value calculations. This is OK (mostly) when peace deals are always either "I take your stuff" or "you take my stuff", but when they're "I take this stuff and give you this other stuff" it's rather more awkward.
