Crusades were popular among the younger sons of the nobility because they going to inherit less or not all so they had a chance to improve their status and that should be reflected in the game. Any younger heirs you have should be able to be a beneficiary and then remove them from the line of succession. Any titles your beneficiary inherits would then also be ineligible from being inherited by any of your heirs as well, maybe going to their spouse, a powerful vassal or liege if they die without an heir.
For the Varangian Adventures, it feels like of weird that you can't leave anything you already own to any of your heirs. To make it less gamey, once you unlock the first perk of the Adventure legacies, once per life time you can designate one your heirs to inherit your primary title and all de jure lands in it if you successfully Varangian to a new territory.
