So I declare war on a non-christian country. Another AI country declares war on them as well. A much larger country goes to war with me in their defense, but leaves the other christian attacker alone. The larger country is also larger than the other christian country.

Well they have to pick someone. I doubt the AI has been made to deliberately target the player. Most likely you were the "optimal" target to be taken down first. The fact that you are smaller makes you easy to clear out of the way and then they can concentrate on the larger target. Or just bad luck.

The AI decides it could take advantage here, and targets you (You being smaller and weaker), and SMARTLY does not attacker the bigger potential enemy.

AI noticed you were vulnerable and it was a good time to attack, and was also smart enough not to antagonize the larger enemy, sounds like a good AI decision to me.

If the AI goes on to defeat you first, then with you out of the way, declare war on your larger ally. Well i will be very impressed

Me too.

I've seen something similar fighting pagans, but with regard to me being weak in one war and stronger in another. I DoWed a small pagan country and was DoWed in turn by several bigger ones so that I had to hire lots Mercs just to fight them off. In a later war, I hired my Mercs upfront, and what do you know, all the other pagan countries decided to let me fight one-on-one with their buddy now that I had a mini-doomstack ready and waiting. Very smart.
