As Castille...
I warned Aragon at the beginning of the game, made alliances with Portugal and Navarre, started building some cavalry and infantry, and then started the game; I was expecting Aragon to declare war on Sicily (or some other move) so that I could use the warning to good advantage: I like to take a few Aragonese provinces on my way to getting the Empire government, and getting cores for eventually forming Spain.
So far so good, but Aragon doesn't declare war immediately, about three months, I think, so I am deciding it's a no go: Aragon is heeding my warning. I decide to move all my troops to provinces bordering Granada, and go after Almeria and Gibraltar (I
am considering that moving my armed forces off the border provinces of Aragon might loosen him up a bit).
So, now my troops are stationed off Granada. Just as I am about to declare war, oops! Aragon goes after me! Hmm. Portugal, that faithless gal, drops me like a hot rock and walks off hand in hand with Aragon, so now I have a two-front war! Navarre sticks with me. Thanks, friend. I knew I could count on your 1K army. Oh well, every little bit helps.
Off to Aragon with my army, and can you guess what happens next? As I am getting into the fight with Aragon, Granada declares war! Jeez, did I up the AI agressiveness without knowing it?

Blast! The next wave of troops I make now have to go south to Granada rather than west.
I manage to successfully besiege Braganaca and Lisboa in Portugal, and ask for Brag province in a peace negotiation: Portugal gives it up. Whew! Peace to the west. Now I can relax a little.
Did I mention relax? The deuce you say!! Not two months later I get more great news: England jumps into the fracas!

Another three front war, now to the north. I am critically short of troops thanks to the new more-lethal combat effects. Invasions occur on the north coast, and England takes Navarre as well. A large 14K stack of Aragonese troops invades. It looks like I am in bad trouble. I manage to bribe Brittany into Peace (who was allied with England and also invaded a north coast province, so that took me down to only about five enemies (thankfully, Morocco and Algiers didn't invade).
Then, the Byzantines attack the Knights! The Knights are in my sphere. I could decline, but I think, why not, and support them? The Byzantines will be busy in the east, and probably won't attack me. I declare war.
But, I am seriously outgunned in the west. I buy off Aragon, dang it: I wanted Aragon province! Eventually, the Byzantines run into problems and I am able to squeeze a few ducats from their fists. I manage to successfully gain Almeria and Gibraltar and force Granada to give it up. This leaves England alone. I breathe a sigh of relief. If this is a foretaste of the game now, I won't have time to play around with diplomacy. I'll always be fighting!
Wow. I've gone longer than I expected. Well, I managed to turn the tide in England, retake my lands and the southern provinces in France that were English-owned. Interestingly, while I was offered those several provinces by England herself, when I went into peace negotiations, she wouldn't accept the deal by me with only two of the occupied provinces chosen. I'll have to test that.
Anyway, that's my experience so far with the AI.
