I'm familiar with the AI's pecularities when it comes to accepting peace offers, but this one is new to me. Currently in a Korea game, and I got a colony next to Portugese south Africa and began to westernize. However, Portugal subsequently declared a crusade against me and thanks to AI not taking attrition has sent their entire fleet and army to invade my Korean homelands. Since I am like 10 techs behind they easily crush me and are in the process of fully occupying. Warscore is currently around 95%, and he war has lasted 10 years so far with no end in sight, because of the retarded AI peace mechanics. Every single one of my provinces except for Ceylon is a red thumbs down, and they declared a crusade I guess they don't want gold. So I'm stuck in a situation where they won't make peace even if I offer them 300%+ warscore worth of stuff. I assume this is because all of my provinces are too far away for them to core, so they don't want them. Their nearest provinces are in South Africa. Even attrition doesn't matter since it looks like they are reducing war exhaustion with diplomatic points.

Suggestions?

Yeah, I think this has to do with the "Show Superiority" CB. It's a ruthless one because they're only kicking your ass just to flex muscles and that's it. You can do the whole "Rival/Cancel Relations" thingee to help at the negotiating table but other than that you just have to wait for them to get bored...
