Historically Ahmednagar is one of the successor states to the Bahmani Sultanate (simply called Deccan in the game). They were the closest to the expanding Mughal empire and therefore the first to fall to them of the deccan sultanates. But before doing so they put up a very good fight under Malik Ambar, a Peshwa (prime minister) once imported as a slave from Ethiopia (a habshi in the Indian context).
They also arguably served as an incubator for the Maratha Empire (simply called Maharashtra in the game) which kept much of the institutions, tactics, etc of Ahmednagar and Bijapur (another Bahmani successor state).

Bundelkhand is a region that was never entirely unified historically, the most prominent Bundelkhand state would be that of Orchha.

In the game Bundelkhand is a one province revolter in the province of Mandla (which is a bit odd as Mandla should probably be the capital of the "Gondwana" state for most of the game, but this is probably dictated by the mangled province layout of the area).
Ahmednagar is another revolter but one that starts without any cores so in order for them to appear like they did they'll have to be rather lucky with rebels. Normally Maharashtra will surface instead as it's the prefered state of the marathi culture in the game.
