I only have until 1490, so it's stuck with two. Got slowed down by an early war with the ottomans.

Three wars, including the war you are in in the moment, are achievable until 1490. Just don't take any extra money, war reparations etc.

Last war should against an ally of the PS, so that you can peace him out separately. Also you can cheese that way the truce timer.

Mind that you don't need Rome or Venice to keep Italy in the empire. Also, you can have the pope release its former vassal, and then diplo-annex the latter in time for 1490.

you do need Rome. You very specifically need Rome.

You have time for 3 wars. You'll also have the AE reduction idea from influence and the age bonus for the last one, which will help tremendously.
