1230 hours and counting here. Haven't played for about 2 years now, but back again. I have wondered this before, but with zero AE with any neighbor before a peace deal, and that peace deal stating I would receive 42.8 AE, the actual observed after the deal with a single nation was between 62 and 70 depending on the neighbor, and of course coalitions formed.

This is very frustrating, esp in iron man. AE already makes a lot of frustration in the game, and i have always thought it was too much. I suggest that the actual applied AE never be larger than the stated value in the peace deal.

In my case, as France, I took 4 states from Burgundy. Each one I had a claim on. Even 42 seems pretty high, but I can live with it. 70 feels too high.

You can hover over the AE in the peace deal menu to get a breakdown of any nations that will go over 50 AE, also some of Burgundy's provinces are in the HRE so get you extra AE.

Having claims doesn't affect AE. If you took land from Burgundy then you might have taken some Imperial provinces which have AE modifiers. AE is per-country and so the actual amount you get varies depending on a bunch of modifiers. The game also tells you what you will get with everyone who would go over 50 total in the bottom right corner of the peace screen.

The AE value displayed in the peace window is only the base value. This is further modified by things like distance, culture, religion, HRE. In your case most likely you took HRE provinces, which gives extra AE with HRE members.
If you hover over the AE in the peace window to get a list of nations, which will have more than 50 AE towards you after the peace.
Also note, that the AI only joins a coalition against you, if additional to 50 AE they also have a negative overall opinion of you. Use this to keep important nations from joining the coalition against you.
