This is my first real attempt at playing a game of EU3 and I'm playing as Japan with the DW expansion.

I got embroiled in a colonial war between Denmark and Castille, I had warned Castille not to go to war and I became the war leader when I declared war in Denmark's favor. I've occupied all of Castille's substantial colonial empire in eastern North America, and got my warscore to 99% by taking over all of their land in Spain. I was able to white peace out their allies in the game, but when I demand tribute from them it defaults to them not accepting any offer, even a white peace. But, they are able to send a diplomat to me and offer me just about all of their land in North America and half of their land in North Africa for an infamy gain of 75! All I wanted was a few of their colonies in North America. They have two other wars going and I'm guessing that those wars are interfering with my peace process.

I guess, since this was a bug that was not of my doing, I would be happy with taking the deal and lowering my infamy with the console, but it still feels a little cheap. I also don't want to wait 75+ years to work off the infamy for a bunch of land that I'm not interested in. It's 1775 and I've put a ton of hours into this game and I'm still learning a TON about how the systems work, so I'm not quite ready to start a new game and up the difficulty.

Any advice?

how about offering them peace, where it says 'their country will be destabilized if they refuse' along with the 'they will refuse this offer'. each time they refuse they get a -1 stab hit. do that until they are -3 stab, then offer them the deal you want

The ai will offer worse peace deals than they will accept if you offer them when they are badly defeated. It is usually a bad idea to accept them against larger nations as they almost always offer too much territory, the wrong territory, etc instead of things a sane person would want.
