So, at the moment, there aren't really much in the way of ways to distinguish provinces from each other. By which I mean that any given province is the same as any other given province. At the moment, here are the ways:
- Holy Sites
- Number/Type of Holdings
- Coastal/Inland
- Constantinople gets the Theodosian Walls
- Terrain Type (though this only has an influence on combat, really)
And thats pretty much it. Beyond that, everything is up to the player. You can change the religion, the culture, how developed the holdings are, etc. etc.
What I would like to see is more variety to the provinces. For example, EU4 has province modifiers, the most common of which are the various estuaries and centers of trade. Pretty simple, but adds some importance to various provinces. I think similar efforts would be greatly useful for CK2. An excellent example would be natural harbors. You can't really just build up a trading emporium at any old location along the coast. There are coastal areas that are just stretches of beach (much of the west coast of Italy), and those with inlets, lagoons, rivers, coastal islands (much of the Adriatic coasts).
There's plenty of other ways provinces could be distinguished from each other, as well, but thats the first that came to mind.
