Potatoes are a trade good that I feel deserves to be in the game. Although only available in the new world at game start there could be events after the discovery of the new world changing the trade good to Potatoes in certain provinces (ie: Ireland) giving previously poor trade good provinces a decent one and more accurately representing the trade good produced at the time.

Although the addition of potatoes per se might be a bit of a stretch, I'm sure there's plenty of potential for a price change event or few about Potatoes. Currently grain only has negative price change events (permanent -20% from Columbian Exchange, and a temporary -75%/25% from Huaynaputina and Little Ice Age).

Maybe the arrival of potatoes to the old world could give a permanent +40% price modifier? (While also changing a few trade goods in the old world of course) This would mean grain would be a flat 3 ducats (2.5*{1-0.2+0.4}), not bad, but not amazing either. It'd be a pretty significant buff to Grain too, considering how it's currently the worst (event-adjusted) trade good in the game.

Grain covers the product. Potatoes weren't a more valuable product, it took a long time for them to become popular, generally taken to feed livestock and later the poor.

Columbian Exchange covers the addition of the potato to the rest of the world, along with others. It didn't increase the value but just allowed another thing to be grown and grown in areas other crops couldn't. Meaning more supply and lower demand.

i think it is good grain is low value, it should not be as valuable as things like copper

Apparently it is because of the loss in production, it didn't make up for the rise in price, probably due to a lot of people not having the money to raise the price that much I guess. I think as well there isn't a temporary production change mechanic.
