Personal firearms appeared in Europe during the 15th century, so I think the addition of a very late game innovation involving men-at-arms wielding some form of personal firearm would be nice. It could be very effective against all units except heavily armored ones (and also be countered by cavalry), to reflect the early form of technology, and they could have bonuses on plains but have negative effects on most other terrains, to create some balance, and again reflect the impracticality of them in rough terrain at this point.
