I have a demon child, a bastard, under age 12, and I have the option to absorb its life force. But I also have normal children to choose from.

Maybe you are right. I thought I could absorb from any child under 16.

2nd question: any way I can make this demon child my heir without game over? He is a bastard and I have Iqta, Islamic dynasty that doesn't allow bastards to inherit.

religion is not what decides in this game if bastards can inherit.

in the Muslim open succession bastards can inherit i think, but you will get a game over if you do, in the others they cant unless in open elective or pope appooints him to bishopric

if you want to play as that demon child i suggest you convert to nonmuslim religion, righ lick your demon spawn and press legitimize

You can't, it's not allowed in any of the Muslim faiths in-game. You have polygamy, no Kinslayer, and hatred between siblings for a reason.
