Still relatively boring. Especially early on, where you send your science ships out and then just wait for minerals to accumulate so you can click "build." There is a lot of busywork clicking, so it seems like you're doing stuff.
Midgame has somewhat more "stuff" to do in it, like uncovering leviathans and maybe messing with an artisan troupe or something. But most of these are pretty straightforward, "click here, click there" affairs. Wars are not that fun.
Comparing it to something like figuring out a way to acquire a specific title in CK2 or executing a complex set of wars in EU4 - there's just really nothing interesting to do in Stellaris yet.
