Is it possible to change the size of men a province produce?

You can't change the size of men , but you can change the size of the regiment a province can field.

Go to C:\Program Files\Paradox Entertainment\Crusader Kings\db\provinces.csv open it with Wordpad and you then see lines like this one

1;PROV1;Vestisland;Scandinavia;Iceland;869;Hills;0;norwegian;[COLOR=Lime]1[/COLOR];ICEL;NORW;

change the number after the culture of the province, in this case 1, this is the base-income of a province. Which is used for all the scenarios, the higher the income the larger the regiment a province can have
