I think there should be at least three selectable modes for land and sea battle. For example:

1. Offensive:
-leaves minum amount of survivors
-high loss rates
-is a moral killer
-the fastest one

2. Normal
-normal speed, normal loss rate etc.

3. Defensive
-takes most time
-low loss rate
-high attrition

If country one chooses defensive and country two chooses offensive it would result a normal battle.

Some factors shoul affect the choices for examle terrain, domesttic policies(offensive/ defensive slider) and monarchs military skill.

I think it would be a little too much like playing electronic, Rock Paper, Scissors.

But remember - Rock, Paper and Scissors is what battles in Total War series are all about. :)
But that has very little to do with a grand strategic game as it is a tactical issue in individual battles - something that is abstracted in EU2 :)

To be able to issue more detailed command to your troops is a gerat idea, but not like R/P/S.

It would be great if you could choose to burn farms, kill civilians, destroy cities and such, or make a clean war, go straight for the fort.

This would differentiate the type of war France and Golden horde leads, witch is not so in present system. I mean there have been wars fought for money, and weakening of enemy rather than territory. I know that this is what pillaging is for, but it would be great if, by pillaging, you could kill civilians, razor cities, and steal actual money, not the one that goes to the monthly income.
