I'm not sure if I just dont see it or if its a gross oversite by PI. But how can I tell who all I am able to go to war with??

When I look at my leader I can tell who all he has claims on and then I know who he can go to war with. HOWEVER, Without clicking on every one of my Vassals or clicking on every province in the game I don't know how to tell who I can attack from claims I (We) have. Doing the click thing is possible, but it takes WAY to long, especially if you have a whole lot of vassals.

Shouldn't their be a mapmode or something I can click on that would tell me right away everyone I can go to war with over claims?

If you're playing a Christian country then you can only take provinces by having your steward (or chancellor?) fabricate claims on a province. Wait a bit and you should get casus belli to declare war.

Diplomacy mapmode, click on yourself. Anyone on whom you have a CB is coloured in yellow.

If you get vassals to come into your court you can get Claims that way also.

Use the Diplomatic Relations map-mode.

Yellow is for claims.
