I just started a new campaign with Italy on veteran (just want to try my luck).
I learnt some couple of new things that have helped me conquer Yugoslavia with a rather ragtag army.
1. Get air superiority and good bomber support (my standard is 200 fighters, 100 CAS, 200 tactical bombers) in the beginning. Don't underestimate TAC. It has helped me slow down enemy reinforcements without destroying infrastructure too much. CAS can cause -20% penalty to enemy defense if they have no presence in the air.
2. Use tanks (even light ones) to spearhead advance. Avoid mountains and forests. They work wonder in making small encirclements (at least in the beginning). I only attack with infantry if I have at least 3:1 advantage (5:1 for weaker nation like italy).
3. Naval bombardment is extremely good in beating off enemy counterassaults near the coast. As Italy, I have 2 battleships in the beginning, and it provides an extra heavy firepower (for free!).
4. Make sure all your equipment are up to date or at least in the surplus (Meaning if it is 1937 and you just researched 1936, dont mass produce it if your current equipment is in deficit. It is okay to stick with the 1934 model for now...Plan ahead and get a much newer model for future war)
5. Make a lot of mini-encirclements, a lot of them if you have only a few tanks. This helps to gradually weaken and collapse the enemy front, especially a rather entrenched one.
Edit: last thing to mention is that flat land is your friend while mountains and rivers are your worst enemy. I always try to have overwhelming advantage to force my way across rivers, and use specialised troops like mountaineers to attack entrenched positions in mountains.
