I don't know about mapping, but there are modifiers in the game files to increase attrition in the winter. I think they're disabled, however. It looks like a feature that was considered but discarded for worsening gameplay. Would be nice to work out how to put it back in, to see the impact.

Considering how local the scale, it would be very nice to have seasonal variations. Not something I usually want in a Pdox game, but we're literally gonna be looking at the same ten to twenty provinces most of the game so why not.

It would be nice to have seasonal events, too. Like being able to throw a Yuletide festival.

Also, I really liked the idea from King Arthur that armies had to stop campaigning in the winter and encamp until the spring.

CKII already has seasonal events. For instance: Holding a Summer Fair (in the plots/ambition tab) can only occur between May and September. I think "Hold Feast" is restricted to the the November to January range.

Ah, I didn't realize that! I saw the "Hold Feast" option, but I didn't realize it was tied to a certain time frame. Thanks for setting me straight on that.
