I'm not sure how I start. If I pick the 1066 bookmark, do I start in England or can I start anywhere, like say Poland or France?

In terms of religion, can we start off as one of the heresies or are we trying to stamp them out? The manual was a bit vague on that.

Thinking about getting this game but I want to make I know what I'm getting into that's all.

Hi! We're glad to hear you're thinking of joining us! While I only have 365 hours (officially) playing, I can offer some advice. If you have the ruler designer, you can start as a wide variety of heresies if you wish, and you can make it your goal to have that heresy supplant the Catholic (or whatever religion you are playing as) faith. You can stamp out Heresy or try to spread it; the choice is yours, though it's easier to stamp out Heresy your first time around.

If you have no expansion packs, you can start as any catholic nation. Certain other expansion packs unlock other religious groups. "Sword of Islam" unlocks islamic nations, "The Old Gods" unlocks Pagan nations. "Sons of Abraham" unlocks Jewish characters (though there aren't many). "The Republic" unlocks Republics, and "Rajas of India" unlocks the various Indian religions.

When you start a game, you select any nation you want to play. If you have all the expansions, virtually any nation you click on will be available. You can start either as the King or Emperor of said nation, or a vassal under the top liege, King, Duke or Count are all vassals to an Emperor (in the 1066 start anyway). Duke or Count are vassals to a King, and Counts are vassals to a Duke. But there are a few independent counts, especially in Ireland. Ireland in 1066 is particularly recommended for new players, especially the Duke of Munster, since that starts you with a claim to press and two counties instead of one.

It would be good to look at "Let's Plays". I particularly recommend T.J. Hafer's "Crusader Kings Chronicles" which can be found online at PC Gamer for a written lets play. Someone designed a video tutorial on YouTube which should be findable by searching for videos on YouTube.

Personally I found Arumba's Youtube videos "Crusader Kings 2 Tutorial Series" excellent for walking you through how to begin.

There are lots of learning points from 1066 bookmark. Best way to learn the game is with a historical character you identify with.

So most people starting in 1066 William the Bastard will already have goal of invading England in mind. In this particular scenario, you should learn how to campaign effectively.

When you select a bookmark you are presented with several "interesting characters" but if you click the "custom game setup" button you can select any count or higher noble on the map to play as.

When you first load the game you should also be offered to play a "learning scenario". I highly recommend you do so. That will put you in the shoes of Alfonso Jimena of Leon and teach you the basics of the game such as fighting wars and murdering people so that you can inherit their titles. Once you finish the learning phase you can choose to continue playing or resign (I really wish they called the button "End Game" instead) and start a new game with a character that you find more interesting.

Ireland is a common recommendation, but if you choose to play there make sure you've selected one of the two petty kings (duke tier characters) rather than an earl (count tier character).

Another common recommendation is to start as any of the dukes in the Holy Roman Empire. You'll be safe from outside threats and can focus on dealing with the other dukes. Matilda of Tuscany or Otto of Bavaria are both excellent choices for a first proper game.
