Mongolians should appear during civil wars, should suffer attrition, should have stacks not exceeding 40,000 troops, should pay attention to attrition, and should not combine stacks except for short periods (to defeat another large stack, or to storm a fortress).

I just had my arse handed to me in a (until then) lovely Roman Empire game by the hordes, as I'd taken part of Persia and they decided they wanted it.

The only way I can imagine then being remotely beatable with the current doomstack is if you could get boats into the Caspian Sea so you could disembark into a fight without losing half your army to attrition. Because, while I can (and did) make a 150k doomstack, it's down to 50k by the time it gets into combat, leaving it to get eaten and spat out by the Mongol immunity stack. Give Mongols a good stream of troops flooring into Aral every now and then, but make them have to spread them out. Because I can't honestly be bothered playing again with this "lol, that side of the map dies now" mechanic in place.

That or a decision option called "Mongol Defence" which costs a huge chunk of your treasury and makes you immune to Attrition for the duration of the current war.
You need to gather your army in steps, and throw them into battle stack by stack so that you don't lose people to attrition on the march. Attrition will still be terrible enough once the battle gets going and also if you need to retreat afterwards, but you should aim to get all your soldiers to the battlefield first.

Forming a 150k stack yourself is just terrible, as it wastes so many of your troops before they even see a Mongol horse archer.

Have your guys form up in stacks of 30k or 40k (whatever the supply limit is) and throw them against the Mongols like just so many sling shots. They'll get mauled terribly but if you keep the Mongols continuously engaged in battle you wear their morale down along with their numbers, and you'll hurt them so much more than if you were to form a doomstack and throw that into battle in one piece.

150k against 100k would likely still see you lose, though. But you might wear them down to a manageable number... 30k or so... which eventually other AI factions might be able to defeat.

okay im comming here to +1 this, after i lost half of persia in my cheated Roman empire game (basically i own the old empire + persia + germany thanks to gold cheats), i coudnt even get my troops there in time before he got 100 warscore (not that it would matter, since it was imposible for me to defeat their 118.5 k people army, in a region that at most supports 30k per region), basically you cant defeat neither the mongols or the other mongols exept by begin gamey(putting 130k troops in ship with no atrittion) and that if you are near the ocean, forget about winning if you are land locked

you need to remove the no attrition limit, make it for example twice as much as the normal attrition

I beat 90k with 135k so I think 100k should fall to 150k with good generals. When I did it I loaded several times just to test it and I can't remember losing even once but I might have. Difficulty setting was hard but not very hard.
