There is an exploit that can be used as a cheat and makes ironman games challangeless. Game is not adding recruited holy order troops in the total army numbers in ledger/stats and AI is ignoring them on the map. For example if you have an stack of 1000 levy and 3000 HO mercenaries and the AI enemy has 2000 of his own troops they will attack your combined forces because it does not register you having them.

If you want to test it, start a vanilla game, go to year 1100 start as king of Jerusalem, wait one minute to get jihad declared and raise holy orders, put in a cheat for piety if you need it, look at ledger, the number is same as before you had them, if you take mercenaries it will show them in ledger. If you add 500 levy troops to the holy order stack the AI will register only the 500 and attack your stack with much smaller troops than your combined number.

So what is the actual exploit? The AI not noticing the HO troops? Because I wouldn't call that an exploit.

Yeah, it happened before but got fixed. For some reason it rebroke.
It appeared once you fixed the mercenary bug that made a company stay somewhere on map doing nothing without the option to hire it. That was the bug in ToG patch, once the teams changed and that got fixed, there was another bug with AI being unable to hire holy orders. After Wiz came back to fix that this bug is now here and never went away, I checked each time. I think that the bug is somewhere in the foundation of the code and you need to tell the team to dig deep to see what is making it because there always seems to be an x amount of bug with the hire-related stuff or mercs that just gets shifted around. Is there any sort of time frame in which a fix might be expected? Thanks for replying!

I would assume it's in part caused by the fact that holy orders don't fight co-religionists and so the AI sometimes should ignore them, and the religious enemy AI is improperly treating them as same-religion holy orders.
I don't think so, they don't even show up in the ledger, pointing that the problem is much more deep than AI thinking it can't fight them, the AI does not even know they are there.
