[2.5.1.1 (Beta)] Can't choose education for vassal's children.

Yes, updated to the 2.5.1.1 beta patch, and yes, I do have WOL, but for some reason I can't change my vassal's education (or vassal's children's education). I'm currently Duke of Toulouse (under the King of France).

In another weird bit, my granddaughter (of my son/heir) already has Heritage Focus at age 4, and a French guardian even though my son is Occitan (as am I). And I can't change the Focus.

You can only change the focus of children you personally educate, and only through a targeted interaction that sets it to heritage.
