The game is undoing the betrothals. It's just stupid.

Do you mean something like you've betrothed your son to a girl that is about to get land in inheritance?
If you allow your son to leave your court before the wedding then it indeed does get cancelled. Because it's what the player would do (and make a proper matrilinear marriage).
So if this is what happened to you, don't make your son landed (as in allow independent decisions for him). Because the betrothal will be broken if the girl's dynasty stands to lose their lands otherwise.

I mean something like this: I arrange a betrothal with the son of some ruler, he accepts it, I go look other things, and, a few seconds later, I go check the groom page and there is no more betrothal, it just disappeared.

The bug is random, it happens one or other time, but it's damn annoying when it do. And no, I'm not using mods.

What you are supplying is impossible to replicate, making it near impossible to track down.

I never had such problem. Try to reinstal game, maybe you messed sth with files or one of mods permanently changed sth
