I think anyone can convert a pagan - I tinkered with the game stats and made Lenape Hindu and gave them a 99% war score with the Iroquois, and I was able to select conversion as an option. So it isn't strictly limited to Christians and Moslems.

I never ever knew that the game distinguished between an offender and a defender nation. This is so confusing when there are Alliance Wars going on. If I respond to my ally's call to battle, then I must "declare war" on the enemy. Does this make me an offender or a defender????

If you are the alliance leader, and you make a separate peace with an ally of the enemy who declared war on you, then you are still in a defensive war. In any other case, your defensive war turns into an offensive war when you make a separate peace. (And I don't think it matters whether or not you take territory.)
IIRC, England starts in a defensive war in 1419, and if it makes peace with France last, each of the provinces aquired only cost 1 BB point each.
