Everybody Loves to Hate: win a war against a coalition with members on at least two continents.

Lord of the Crowns: As Aragon have a personal union subject that controls Sugla and another that controls Gonder.

A New Hope: As a custom nation starting with its capital in Tataouine dismantle the Holy Roman Empire

To just toss in a few of my own:

Tenka Fubu: Conquer and Core all of China and Korea as Japan.

Norman Reconquest: Conquer and Core all of England, Naples and Sicily as Normandy.

White Knight: As a Catholic Hungary, be Defender of the Faith, have zero Aggressive Expansion, and ensure the Ottomans have no provinces in Europe while having only your starting provinces.

The (Western) Empire Strikes Back: As Montferrat, form the Holy Roman Empire and own and have cores on Rome and Constantinople.

We Did Start the Fire: As a Horde, raze a single province five times.

If the intention of white knight is taking down the Ottomans without eating them you might want to change it to have no provinces beyond your starting ones.
