If I want, for instance, to sphere a country that is producing a lot of iron, is there a way to get a list of all the iron being produced, broken down by country?

As far as I know, no. However if you go to the trade screen and hover over the resource you are interested in, you'll get a list of the top 5 producers of that good.
I have not found one either. You may already be doing this, but I click on the resource icon on the map, click on a territory with a resource I want, then look everywhere on the map to see where it is being produced or will be once colonized, as well as the shade of the color and the population to give me a decent idea of how much is being produced. If you find a better way I'd love to know.
Click on the icon of the good in the Production Tab. It will show you YOUR percentage production compared to the world, but as far as I know there is no way to see other countries' % unless you tag switch.
