Is there anyway to determine which unit the army uses? Whether it's a spear man or knight or an archer etc.

Use the search with words "(CK2) Combat tactics" and have a look of CK2wiki, too. Its an complicated issue but there are combat tactics which you cannot choose straight away but you can affect non-directly them by your troop composition and general. It's a whole new mini-game, I suggest you take some time and learn a bit of them.
