I've been wanting to start up a heresy game, but I don't know how they start up, and which one is the most fun to play.

I've been thinking Cathar, is there anyway I can specifically get that heresy to start up?
 
Apulia is always a fun start, but it's pretty easy.
Oh, misread sorry. I thought you asked what Catholic ruler was most fun to play
