I'm assuming Prosperity affects all races cities equally, but do the +food% blessings affect Undead cities in any way?

If not, do the +mana% spells work on Undead cities in a similar fashion?

How does Dark Ritual come out on Undead cities if that is the case?

+mana spells should have the same effect on undead cities population growth, as +food spells have on, for example, human cities.

What effect Dark Ritual has because of it, I guess you have to try out for yourself ;)
