Is it possible to remove countries from your SOI without waiting for some other country to "retake" them?
And what are good army compositions to use? So far I have been using 6inf/guard, 2 cav and 2 arty and it seems to be working well but is there some better combination to use?

Oh and whats that button on the trade window that lets people and factories to buy from stockpile? It seems that when I tick it all the needs of my people go down into red on the tax screen and the trade prices all go down (was trying it out with a goods cheat)

No. (I believe someone wrote a mod that adds the capability, though.)

You want (almost) as many artillery as infantry/guard.
 
I'd say you want about as much artillery as infantry/guards provided you already have enough of the latter to avoid being outflanked. Also, infantry/guards tend to sustain more casualties than artillery so it's good to have more of the former around as reserves (although in the more serious wars mobilized units can take on that role).
 
Remember that artillery can shoot over the first line while being in the second line. Infantry/cavalry cannot. So if you have near a 1:1 ratio in infantry:artillery and your opponent does not you have a big advantage built into your forces.
