convoys + escorts, how does it work?

I'm playing as ottoman empire, WW1, and most of my convoys are being destroyed by Royal/US navy probably, even if i add escorts to them. Is there any point in adding escorts to convoys at all? they are just being destroyed alongside my convoys, so what is the purpose of them?

what is the right number of escorts per convoy, 1:1 ?

Also, by default, i think messages about convoys being sunk are only displayed in the message log which is very annoying, as i lost half of my convoys without even noticing it and AI just kept sending new ones....

Simply right click such a log message and you get to choose a pop up message instead.

i know, i was just talking about the fact that by default it is turned off. but it's not important, i just want to understand how the convoys/escorts work. i haven't found any detailed guide.
