Is there a list of all the sprite pack skins labelled with their country? I can't really tell who is who just by looking at the marketing pics.

The threads for each one linked off the SP sticky thread above, list what nations and eras are in what packs.
Men fear thought as they fear nothing else on earth -- more than ruin -- more even than death .... Thought is subversive and revolutionary, destructive and terrible, thought is merciless to privilege, established institutions, and comfortable habit. Thought looks into the pit of hell and is not afraid. Thought is great and swift and free, the light of the world, and the chief glory of man. Bertrand Russell
Thanks for the response, but this isn't quite what I was looking for. I have already seen the marketing images, but for example they don't tell me specifically which unit in the picture is the new French skin and which is the new American skin, who is Danish and who is English.
Are there perhaps any community images knocking about which clearly show the new skins, also labelled with their individual nation?
I'm not aware anyone's posted down to that level of detail, no. There are some models and screenshots on GG's website that might help you some, if they are not what you're referring to as the marketing images:

More than that, well, perhaps some kind soul with them installed, reading this, could go to that level of trouble for you. Can I ask what your goal is here? Are you deciding whether to buy them based on historical correctness perhaps? Those GG links above do have user reviews, if they are of any help.

I am thinking of buying the sprite packs, but I would like to know in advance what my troops would look like through history. It may even affect my decision over who to start playing as.
Though you get that sometimes with the vanilla medieval soldier sprite showing up sometimes.

Yes, but the vanilla medieval soldier looks less out of place than those knights in full armour. He is more of an early renaissance soldier. He is perfect for 1492. Optimal solution would be to disable the Mediaeval sprites by then. I don't know if an uninstal of the sprite packs leaves your game in a valid state.
